    John, I admit, I did laugh a bit about freeze-drying Hamburger Helper. Growing up, I sure heard about it enough, saw the ads, but never had it. My mother was a great cook, did most things from scratch, and things like that were just an unneeded expense in a household that avoided expenses. Once on my own, I generally ate the same way, buying ingredients instead of prepared foods. But if you like it, and it works for you, great! I know how much you like getting things on special, saving money. So do I. As for retired at 62, good for you. I'm about to turn 60, have been retired for a while now, as is my wife who's just a few months younger than I am. I see too many people spend everything they make (and then some in many cases), staying permanently in debt and forced to work. We lived way under our means, which helped us in two ways. We saved money for retirement, of course, but we also accustomed ourselves to a less lavish lifestyle than most people in our income range. I wish more people would understand just how powerful that double-benefit of frugal living really is.

    • @JohnInBibs
      @JohnInBibs 2 дні тому

      My mom was a good cook and my grandparents were even better. So much so that I dedicated my last recipe book to them since they inspired me so much in the kitchen, As for the HH when I was a young pup and married we lived on HH and rice a roni. The military didn't pay much and that is what we could afford. A very cheap meal. 1 pound of hamburger and a box of HH. Was yummy then and still is for me now. At todays prices there is no way I could have made these 32 meals for under 40.00 from scratch. Thanks for watching!

    • @BruceS42
      @BruceS42 День тому

      @@JohnInBibs LOL, I feel even more in common with you! My father's mother was a good cook, but my *mother's* mother was actually trained in a Parisian cooking school, and her cooking was outstanding. When I was first married (and soon with a child), I was also making little (<$20K), but as a civilian, always a civilian. We shopped mostly in the generic aisle and the "whole foods" section of the lower-priced grocery. We bought things like 20# bags of potatoes, things I called "free food". Actually not a lot different from when I was single, as a "starving student". One common meal for me was to saute one onion and one bulb of garlic, all chopped up fairly fine, in butter. Not much money in that! I also ate a lot of ramen soup, which we still get. It's a "processed food", but so cheap for what you get. There's a certain level of satisfaction in being frugal, in realizing that you're not buying into the culture of acquisitiveness, with the trap of eternal debt. There's a bit in an ELP song, something like "See the woman on the TV show, she's covered in diamonds from head to toe. They make you believe it's the status quo." We never bought that story. And here we are, retired early, still enjoying our lives, and not owing anyone anything. I think another key of enjoying a lower-cost life is simply appreciation. We recognize how well off we are, in a global sense, and appreciate it. 32 meals for $40...that's the kind of thing I love. I'd think about that cost every time I ate one. You could be spending $40 at a restaurant, or $1.20 to eat something that you know more about what went into it. IMO, your approach is far superior to the one society is pushing.

    Maybe a ziploc bag would work well to fill the molds. Fill the bag, and then when you're ready cut the end. Throw away and use another when you need to fill more. Cheap and maybe would work.

    Congratulations on the retirement. If you were using 80% beef, would you drain and rinse the hamburger? Just a note, when freeze drying hamburger, I have rinsed with broth made from bouillon. I think that helps retain some flavor. But I am wondering if I need to rinse when putting in a recipe. Thanks!!

    • @JohnInBibs

      The verdict is out on 80%. I don't use it but I have seen others who have been fding do it both ways. Some swear you don't have to rinse and others swear that you do need to, I used to rinse my 93% but no longer do. Sorry not much help there but I would hate to advise you incorrectly.

  • @MisterEMystery
    @MisterEMystery 8 днів тому

    Yep, great minds do think alike. It was Stroganoff and Beef Pasta that I had made and FD’d. I remember adding shredded cheese to something, but I had several boxes of hamburger helper and didn’t FD everything. With a Small FD, I can only get 2 pounds per tray and didn’t have the room you do. I cooked something up separately, but can’t recall what I added cheese to. I wish I had thought about adding mushrooms to the Stroganoff, that sounds good and it wasn’t until I read up on it, that I found out mushrooms is what most of it has (often without noodles). I also wish I had a Price Chopper near me, it seems they have the good stuff on sale quite a bit. Walmart is the cheapest place near me, everywhere else is too expensive. Huh, you’re older than me! I figured with all the talk about going to work in previous videos that I was the older one. I’m retired too, but that’s because I’m disabled and have been on Social Security Disability since 2019. Welcome to retirement! Have you run into the “problem” of trying to figure out when you ever found the time to go to work yet? 🤣

    I know this video is 6-7 months old, and you may have already figured this out.. I noticed the turkey, gravy, potatoes all crumbled as you were transferring them to Mylar bags.. in the future I suggest using a spatula-to transfer the food. If nothing else it could save a little time. It’s so amazing how you remember what you said earlier in the videos! Like taking one potato square from each tray. I know it’s usually a couple 2 or 3 days later between traying, freezing, freeze-drying and recording the bag process. Recently I made some hamburger helper meals (cause I’m lazy and don’t put as much efforts into my MRE’s as you do) and freeze dried them. I lost track of one of the bags and didn’t heat seal it let alone put an O2 absorber in it. A couple days later I found it abd decided I would taste test it. I followed your directions with rehydrating, put hot (boiling) water in the bag, sealed it for 2 minutes…opened and stirred then closing for another 2 minutes… opened and stirred once more and began eating it. It was perfect! Just as fresh as when I originally cooked it. You are amazing good sir!

    I wish I had read/watched this video BEFORE I tried freeze drying my homemade macaroni salad. I used Duke's mayo because it's sugar free. Well, after about 20 hours I happened to be walking past my freeze dryer and saw that my macaroni salad was 'boiling.' I'm sure it wasn't really boiling, but that's what it looked like. What a mess! It was all over the inside of my machine. I should have thought this one through before attempting it because I have made real mayonnaise before and I know it's almost all oil. Let my failure be a lesson to all of you. Use John's recipe instead!!

      I didn't take a thermometer out and measure. It was not boiling fresh from the kettle,, that would rehydrate your eggs to hard boiled texture. It was about the temperature that you would want to eat eggs. Very hot but not boiling.
